You'll need

4 large baking potatoes
1 tbsp olive olive
Maldon Sea Salt
200g creamy goat's cheese, crumbled.
4 tbsp Caramelised Red Onion Chutney
100g butter
Tin Foil

How to make

Pre-heat the oven to 200c.

Wash & scrub the potatoes, then prick them several times with a fork, before rubbing the skins with olive oil & sea salt. Place in a roasting tin & cook for 1 hour 15 mins in the middle of the oven.

Once cooked, remove the potatoes from the oven & split the tops. Add 25g of butter (or to taste) to each potato. Split the goat's cheese 4 ways & fill the potato before topping with a tablespoon of Caramelised Red Onion Chutney. If you can wait another 5 minutes, pop back into the oven & grill to warm & melt the cheese. Serve with a green salad or bowl of hearty soup.
