Sweet Apple, Pear & Fig Roasted Parsnips

Sweet Apple, Pear & Fig Roasted Parsnips  By

You'll need

5-6 large parsnips
4 tbsp sunflower oil
4 tbsp Apple, Pear & Fig Chutney
Maldon Sea Salt

How to make

Heat the oven to 200C.

Peel the parsnips, cut each parsnip in half so you get 2 long halves, and then cut each half into 3 long pieces. Boil the parsnips until not quite tender. Leave to cool and drain well in a colander.

Brush the parsnips with the Apple, Pear & Fig Chutney. Heat the sunflower oil in a roasting tin until almost smoking then carefully toss the parsnips in the hot oil. Roast the parsnips for 20-30 minutes, or until crisp and golden.
