Slow Cook Beef Curry by Food Blogger Yet Another Blogging Mummy

I've been seeing a lot of tasty sounding slow cooker recipes of late so I decided to take the plunge a put a slow cooker on my Christmas list. Santa delivered and since then I've been experimenting with lots of warming recipes to get me through the cold winter. My favourite so far is this delicious Beef Curry recipe which I'd love to share with you. If you haven't got a slow cooker, you can still cook this dish in a frying pan and simply transfer to a casserole dish and leave in the oven on a low heat for a couple of hours.

Serves: 4 Preparation time: 30 minutes Cooking time: 3-7 hours

You'll need

  • 450g diced beef
  • 2 cooking apples
  • 400g chopped tomatoes
  • 2 onions
  • 1 carrot
  • 1 potato
  • 3 mushrooms
  • 75g sultanas
  • 3 tbsp English Provender Plum and Apple Chutney
  • 1 beef stock cube
  • 400ml boiling water
  • 3 tsp madras curry paste
  • 3 tbsp plain flour
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

How to make

  1. Peel and chop the onions, potatoes, apples and carrot.
  2. Fry some oil in the slow cook dish.
  3. Add apple and onion and fry until soft.
  4. Meanwhile, tip the flour into a flat dish, add the beef and turn several times until each piece is fully coated in flour.
  5. Add beef to cooking pot and fry gently.
  6. Crumble the stock cube into a jug and add boiling water, stir until dissolved and add to cooking pot.
  7. Add carrot, potato, mushrooms, chopped tomatoes, sultanas, chutney and lemon juice.
  8. Stir in curry powder, taste, and add more if necessary.
  9. Slow cook on medium for about 6 hours.
  10. Serve with rice.
