« Rosemary and Garlic marinated Lamb chops served with garlic mash »

Serves: 4

Preparation Time:20 minutes, plus 2 hours marinating

Cooking Time: 40 minutes

Ingredients:

  • 1 tbsp olive oil
  • 2 tbsp Very Lazy Garlic paste
  • 2-3 tbsp freshly chopped rosemary
  • 1 tsp English mustard grated zest and juice of 1 lime
  • freshly ground black pepper
  • 8 small lamb chops
  • 1/2 kg potatoes 150ml milk
  • 25g butter
  • pinch of nutmeg
  • freshly ground black pepper

Method:

  1. Blend together the oil, 1 tbsp garlic paste, rosemary, mustard, lime zest and juice, seasoning to taste.
  2. Arrange the chops in a dish and coat with the marinade.
  3. Cover and leave to marinate in the refrigerator for 2 hours, turning occasionally.
  4. Meanwhile, make the mash. Peel potatoes & cut into pieces. Bring to the boil in water. Cook for a further 15-20 minutes or until potatoes are tender, then drain.
  5. Heat milk in a small saucepan.
  6. Add the garlic paste to the potatoes and mash, adding the butter, hot milk, nutmeg & season with black pepper.
  7. Grill the lamb chops for 20 minutes or until cooked according to taste, brushing occasionally with the marinade.
  8. Serve the lamb with a selection of vegetables alongside the garlic mash.
