« Pork and Pepper Kebab with couscous »

A delicious pork kebab served with herb couscous.

Serves 4

PREP 10 mins plus 30 mins marinating

COOK 15 mins

Ingredients:

  • 400g/14oz pork tenderloin, cut into large cubes
  • 1 red and 1 yellow pepper, deseeded, cut into bite-size pieces
  • 1 courgette, sliced
  • 4 tsp Smokey Barbecue Marinade
  • 350ml/12fl oz hot vegetable stock
  • 200g/8oz couscous
  • 4-5 tbsp chopped fresh herbs

Method:

  1. Place the pork, peppers and courgette in a non-metallic bowl. Toss with the marinade, then leave to marinate for at least 30 mins.
  2. Meanwhile, pour the hot vegetable stock over the couscous and leave for 15 mins before fluffing up with a fork. Cool before adding the herbs.
  3. Thread the pork, peppers and courgette onto metal skewers and cook the kebabs over a barbecue or under a hot grill for 10-12 mins, turning often. Serve with the herby couscous.
