« Juicy Marinated Steaks with Mexican Salsa »
This fresh and zingy salsa makes a barbecued steak super summery.
Serves 4
Takes 20 mins
Ingredients:
- 2 tomatoes, chopped
- 150g sweetcorn
- 1tsp Very Lazy Red Chillies
- 3tbsp EPC Lime and Coriander Dressing
- 2tbsp chopped coriander
- zest and juice 1 lime
- 2tbsp extra virgin olive oil, plus extra for drizzling
- 4 thick-cut rump or frying steaks
Method:
- Mix together the tomatoes, sweetcorn, chillies, dressing, coriander, lime zest and juice with the olive oil. Season well.
- Drizzle the steaks with olive oil and season. Cook on the hottest part of the BBQ for 2-3 mins each side, or until cooked the way you like it. Leave to rest for a few mins before serving with potato wedges, salad and plenty of the salsa.
Raining? Heat a non-stick pan until very hot. Drizzle the steaks with olive oil and season. Cook each steak for 2-3 mins each side, or until cooked to your liking. The salsa also tastes great served with barbecued chicken and pork.
