« Chilli Roast Butternut Squash & Chick Peas on Rocket & Baby Spinach Salad »

A fabulous root vegetable, chick pea and spinach salad with a chilli kick from our Hot Chilli Relish.  

Serves 4.

Ingredients:

  • 1tbsp olive oil
  • 1 large butternut squash
  • 8oz cooked chick peas
  • 4 tbsp Hot Chilli Relish
  • 1tbsp olive oil
  • 2tbsp vegetable stock
  • 1tbsp chopped coriander
  • Salt & pepper
  • Baby rocket
  • Baby spinach
  • 2 bunches spring onions
  • Classic French Dressing

Method:

  1. Peel the squash, cut in half and take out the seeds
  2. Cut each half into quarters
  3. Put into 1tbsp olive oil and roast 190° c until cooked and colouring
  4. Put chick peas, relish, 1tbsp olive oil and vegetable stock into a pan and bring up to the boil
  5. Pour over squash and put back in the oven for 15 minutes, do not burn
  6. Take out of the oven and add chopped coriander and season
  7. Mix rocket and spinach
  8. Thinly slice the spring onions and mix with salad
  9. Add the Classic French Dressing
  10. Put salad onto plates and leave a well in the middle
  11. Lay 2 pieces of squash in each well
  12. Sprinkle with chick peas and Hot Chilli Relish over and serve
